I’ve made it with only the green chilis and we loved it! Probably a fresher taste than the smokiness of the adobo sauce.

I don’t understand this: “discard chipotle pepper, skim out seeds” – you only add the seeds?

Maybe my tenderloins were smaller, but the hour cooking time seemed too long. Thank goodness I trusted my intuition and checked them at 35 minutes because they were done and perfect.

Tested this recipe out yesterday. It was VERY good – my husband said he couldn’t stop eating it. I served with tortilla chips. Will definitely be making this dip for our next party.
